About an hour away from Regina is the little town of Moose Jaw, so that's where we spent June 9th. Our first stop was the Saskatchewan Burrowing Owl Interpretive Centre, where we saw the cute little imprinted owls of the centre. It was a really nice day and most owls were out of their burrows, so it was a nice little visit. Then, at the tourist centre, we got to see Mac the Moose, which until January, was the largest moose statue in the world. Yeah, there's now a bigger one in Norway and it is, I dare say, much more impressive. Especially since when we were there, poor Mac didn't even have his antlers! **UPDATE** Mac has reclaimed his title as of October 2019! Fortunately, there were a lot of fun gophers running around him, so they provided a little entertainment. We also made a quick stop at the Moose Jaw railroad station before going to our main activity of the day.
So, we weren't allowed to take pictures inside, but let me assure you that the Tunnel Tours Moose Jaw is famous for are amazing! We learned a lot about Chinese immigration in the West and in the Prairies, and also about the prohibition (Moose Jaw was even linked to Al Capone!). Going underground in an immersive tour was really fun, and we actually learned a lot.
After those two tours, we were ready to hit the road again and headed to Douglas Provincial Park, where we wanted to spend the night. In the end, we arrived much too early to camp there, so we stopped just for a little hike next to the train tracks, then kept going towards Saskatoon.

TL;DR: Moose Jaw was a good day trip, and we did everything there was to do. We visited the Burrowing Owl Interpretive Centre, saw Mac the Moose and went through the Tunnels of Moose Jaw. I'm guessing Douglas Provincial Park is a cool place for hiking, but we only wandered around a little before heading to Saskatoon.
